Hello, and welcome.
I would like to inform you that I AM MOVING.
...well, sort of. I have started a new blog, Oui Crochet, that focuses just on crochet, crochet patterns, and crochet resources. I am in the process of building it up as a one stop shop for all things crochet, and I am very excited about it. I hope you will come over and check out my progress. :)
I will be moving my patterns from this site, to my new site. My idea is to leave this site active, so that you can still access other aspects of this site. I will also leave a modified "introduction" post where each pattern is on this site, as to keep all links active and make it so that you can easily locate the pattern's new home. As an added bonus, you will also find new printable/downloadable versions of my patterns.
I apologize for any inconvenience, but I assure you, this change is a positive one. I look forward to seeing you at Oui Crochet.

Lemon Squares Recipe


I love lemon.
That is all.

Okay... that's not really all. I really do love lemon desserts, though. A couple of years ago, I researched a ton of lemon square recipes. Some were too sweet. Some were not sweet enough. Most didn't have enough lemon flavor. What was I to do?

Giving up was simply out of the question.
I fiddled around and made my own!

These lemon squares are sweet, but I think the sweetness balances out the super-lemony flavor. If you want a little less sweet, simply reduce the sugar a bit.

Lemon Squares
What You Need:
Crust:
3/4 cup butter, softened
2 cups all-purpose flour
1/2 cup white sugar

Filling:
5 eggs
1-¾ cups + 2 TB white sugar
1/4 cup + 1 TB all-purpose flour
1/2 teaspoon baking powder
1/2 cup and 1 tablespoons lemon juice
Finely grated rind of one lemon

Powdered sugar for dusting.

What You Do:
1.Preheat oven to 350 degrees F (180 degrees C).

2. To make crust: Mix together the butter, flour and sugar with a fork until crumbly.
Press into an 9x13 inch pan and bake for 15-20 minutes. Crust will look white. Do not brown!

3. Combine the eggs, sugar, flour, baking powder and lemon juice and lemon rind in a bowl. Beat until well mixed. Pour over pre-baked crust.

4. Return to oven and bake an additional 20 minutes. Remove from oven and sprinkle with powdered sugar. Let bars cool before cutting.
