I promised to tell you all how I do those, so here it is!
The great thing about these beans, besides being really easy and really yummy, is if you add a little more cheese, they also make a great bean dip!
Fixed Up Refried Beans
What You Need:
A 16oz can of refried beans
1/2-1 jalapeno, finely chopped
1/2 cup monterey jack cheese (1 cup for a cheesy bean dip)
1 TB butter or margarine
What You Do:
- Melt the butter in a small pot on med- med high heat. Add the jalapeno, and cook until tender and aromatic.
- Add the beans. Stir well and heat through. Reduce heat.
- Stir in the cheese until melted.
- Serve hot.
The jalapeno adds a really nice flavor. When you saute it, it mellows out, so there really isn't a lot of heat to it. My 1 1/2 year old loves these beans!
Oh that sounds good! I love Mexican food. Adding butter and cheese makes almost everything taste better!
