Brownie Mix Cookies

Are you looking for a great, quick last minute cookie to leave for Santa Clause? I have it on good authority that Santa LOVES these cookies. (At least at my house he does!) If you like chocolate, I'll bet you will like these, too!
Do you like the chewy, yummy brownie edges? Yes? You'll love this cookie!
Do you like the chewy, yummy brownie edges, and you like EASY? Of course! You'll love this cookie even more!
Just look at them! YUM!
I've been making these cookies for years, and my family loves them.
I've also learned a coupe things in my years making them. First and foremost... butter, grease, or spray that cookie sheet! If you don't... they will stick.
I mean, chocolate brownie cookies sticking to a cookie sheet does not necessarily mean that they won't get pried up bit by bit with a spatula, fork or fingers and eaten anyway, but it certainly doesn't make the cookies look pretty and suitable for a cookie tray or a gift.
What??? Let's be honest here... you'd do the same thing, right?


More things I've learned about these cookies:
  •  While not absolutely necessary, you can refrigerate the dough so that it is easier to handle. I am sometimes a bit too anxious to eat them bake them, so I skip this step a lot.
  • Bake the cookies until they look done, but are still soft (do not over-bake), then let them sit in the cookie sheet for a couple of minutes before removing and cooling.
  • You can add things to them- nuts; chocolate, peanut butter, white, or mint chips; mini M&Ms or other chopped candy bars; pretty much anything that sounds good!
  • Once cool, you can frost theses cookies, or even sandwich them together with a yummy filling!
  • This recipe calls for the 9x13 family size box of brownie mix, but you can use other, smaller mixes and just use half of the additional ingredients called for. (For example, if it asks for 2 eggs, use 1.)

Brownie Mix Cookies
(Makes about 4 dozen)

What You Need:
1 box of 9x13 family size brownie mix
1 egg
1/3 cup vegetable oil
2 TB water

What You Do:
  1. Preheat oven to 375 degrees.
  2. Mix all ingredients in a large bowl, just until blended.
  3. Drop by rounded teaspoonfuls onto a greased cookie sheet.
  4. Bake for 7-8 minutes, or until soft, but done.
  5. Let rest on cookie sheet for a couple of minutes before removing to cool.
  6. Store in an air tight container.
