Fixed Up Refried Beans

When I shared my easy red chile for burritos, I mentioned the refried beans that I make along with it.
I promised to tell you all how I do those, so here it is!


The great thing about these beans, besides being really easy and really yummy, is if you add a little more cheese, they also make a great bean dip!

Fixed Up Refried Beans
What You Need:
A 16oz can of refried beans
1/2-1 jalapeno, finely chopped
1/2 cup monterey jack cheese (1 cup for a cheesy bean dip)
1 TB butter or margarine

What You Do:

  1. Melt the butter in a small pot on med- med high heat. Add the jalapeno, and cook until tender and aromatic. 
  2.  Add the beans. Stir well and heat through. Reduce heat.
  3. Stir in the cheese until melted.
  4. Serve hot.
The jalapeno adds a really nice flavor. When you saute it, it mellows out, so there really isn't a lot of heat to it. My 1 1/2 year old loves these beans!

    1. I love it too... especially when it's roasted or at least cooked up a bit first. I think it brings out such a nice flavor.
